Is there a way to cut out the middle man with VoIP? The service provider.

VoIP means 'voice over internet protocol', which means that I can make telephone calls using the internet.
But I don't understand why you have to have a service provider for VoIP. All other internet protocols that I know of do that transmits data across the net, it doesn't require a service provider (for example SMTP which is for e-mails; does not need a
